Paulina’s is a "multi-cultural" restaurant that was opened by Paulina Corvalan, in Clyde last year. Paulina’s offers delicious cuisine from across the globe New Zealand, Europe, South America, Asia. It’s a wonderful option for rail trailers before or after their adventure it has a relaxed atmosphere and is great for groups of all sizes and serves flavoursome food every time! Paulina is originally from Chile, and it is here where she first developed the passion of working with food in her Grandmothers kitchen. Corvalan trained as a chef there and completed an apprenticeship at Saffron Restaurant in Arrowtown when she decided she wanted to live in New Zealand.
"I consider myself half Kiwi, half Chilean. I came here as a tourist. I travelled down from Auckland and arrived in Queenstown. It was so easy 12 years ago to get a work permit being a chef...I never left. I learned a lot about food while travelling and learnt a lot working at Saffron."
After completing her apprenticeship as a fine-dining chef she worked in luxury lodges, as well as homes of the rich and famous. Paulina also set up Silver Fork Chef, working as a private chef around Queenstown and Wanaka and also worked at the luxury lodge Minaret Station.
We are very lucky to have someone with Paulina’s culinary skills choosing to live locally in Clyde at the start and finish of the Otago Central Rail Trail!
